Happy Valentine’s Day! I love doing fun little things to make the day special for the kids, like heart-shaped sandwiches (with a cookie cutter), pink milk, and the heart-shaped meatloaf I shared last week. But last night I realized that in the midst of making a party game, getting names on valentines, and all the other things we needed to do, I’d forgotten to plan something fun for breakfast.
There’s always heart-shaped pancakes, but we had pancakes over the weekend, so I hoped to find something just as quick and easy that would still make my four little valentines feel special this morning. Mission accomplished–quick and easy enough for any morning, but yummy enough to be a special holiday treat.
Easy Banana Blueberry Muffins
1 1/4 c. mashed ripe bananas
3 tablespoons vegetable oil
1 large egg
1/3 c. sugar* (see note)
2 cups Bisquick
1/2-3/4 cup blueberries
Combine all ingredients in a bowl in the order listed. I used a potato masher to mash the bananas and mix in everything else, then folded in the blueberries with a spoon. Drop into 12 lined or greased muffin cups, and bake at 400° for 15 minutes.
*note–for the Valentine’s day pink & red in the picture, I substituted a shake of red decorating sugar sprinkles for the sugar in the batter, then lightly sprinkled the decorating sugar over the tops of the muffins before baking (not nearly 1/3 cup total, but the sugar on top made a sweet crunch. You could probably cut some or all of the sugar if desired, and they’d still be good).
