Cooking on a Shoestring: Monday Meal Planning

With last week’s meal plan, I said that I was hoping to get back in a “normal” routine after the holidays…to which last week replied “hahahaha!”  Three of the six planned meals never got made, and two of the other meals got made on nights other than the ones originally planned.  So basically last week’s meal plan lasted all the way through last Monday. 🙂  

This spurred a pretty interesting conversation on our Facebook page about flexibility within meal plans.  For some families, whatever’s on the plan is what they eat, no matter what.  For others, they pick several main dishes for the week, then make them when it works best.  Some suggested having the kids each pick something for one night of the week.  Bottom line, whatever works best for your family to help you get meals on the table that are budget-conscious, nutritious, and that your family will eat–and don’t give up if you have a week that doesn’t go as planned!

Here’s my plan for this week…I’m hoping to stick to it a whole lot better this week!  (I’ll keep you posted!)

Monday: Roast chicken, mashed potatoes & gravy, corn

Tuesday:  Spaghetti & meatballs, homemade garlic bread, salad  (planning to make a double batch of meatballs to freeze!)

Wednesday:  Chicken and gnocchi soup, homemade bread, fresh fruit (using up leftover chicken/homemade stock from Monday & bread from Tuesday)

Thursday: Breakfast for dinner–pancakes (as requested by the kiddos)

Friday: Ham, homemade mac & cheese, green beans

Saturday: Dinner at a friend’s house–will take something to share.

Sunday: Cheeseburgers, baked fries, veggies & dip, apple & orange slices (also requested by the kids…and their dad)
