Cooking on a Shoestring: Monday Meal Planning

Well, last week was one of those weeks that didn’t quite go according to plan.  Sometimes that’s the way things go, and when you need to squeeze a last minute doctor visit in between the kids getting home from school and an evening Kindergarten Christmas program, you roll with it.  And last week, that meant rolling through the drive-thru for cheeseburgers.  Then there was another day when I was all proud of my domestic achievements, baking 9.5 dozen cookies that afternoon…till I thought, “hmm, what’s on the meal plan tonight?” and realized I should have put the pot roast in about 5 hours ago.  Oops. 

The good news is that with my weekly meal plan in place, those occurrences are more the exception than the rule, and it continues to help me stay organized (at least on more “normal” days), within my food budget, and using up ingredients that I have on hand.  So the crock pot stuffed pork chops are on the meal plan again…for the third week in a row.  But they’re in the crock pot as I type, so at least I know they’re getting cooked this week! 🙂  Here’s the plan for the rest of the week too…what are you serving at your house?

 

Monday: Crock pot stuffed pork chops, peas, canned fruit

Tuesday:  Fish sticks, shells & cheese, and a veggie (yeah, I know it’s not spectacular, but the kids are begging for it and it’s easy!)

Wednesday:  Pot roast, mashed potatoes, corn (this time I’ll remember to start it in the morning!)

Thursday: Breakfast for dinner: French Toast, sausage links, and fresh fruit

Friday: Parmesan skillet chicken, rice, broccoli

Saturday: Cheeseburgers, baked fries, veggies & dip, apple & orange slices

Sunday: Hoping to take the kids out for “Kids Eat Free” night at the Mexican restaurant 🙂
