Pumpkin Cookies Recipe with Brown Sugar Glaze

A Holiday Favorite: Pumpkin Cookies

What is it about the moment that brisk air hits our face? We immediately think about pumpkin flavored everything! I am thrilled to share this recipe with you, as I have made these for many years with rave reviews. The cookie produces a soft cake-like cookie, and the brown sugar glaze is a nice break from the normal cream cheese icing that most pumpkin cookie recipes call for. This gem is truly one of my favorites, and I hope you all enjoy them as much as we do!

Pumpkin Cookie Recipe with Brown Sugar Glaze
Ingredients
  • Cookie Dough:
  • 1 cup of shortening (Butter Flavor Crisco or regular unsalted butter will work just fine).
  • 1 cup canned pumpkin
  • 1 cup sugar
  • 1 egg
  • 1 tsp. vanilla extract
  • 2 cups flour
  • 1 tsp. baking soda
  • 1 tsp. baking powder
  • 1 tsp. cinnamon
  • ½ tsp. salt
  • Brown Sugar Glaze:
  • 3 TBSP. butter
  • ½ cup packed brown sugar
  • 4 TBSP. milk
  • 1 cup powdered sugar
Instructions
  1. Cookies:
  2. Combine shortening, pumpkin, sugar, egg, and vanilla in a large bowl (or the bowl of a stand mixer fixed with the paddle attachment) and combine slowly for about a minute, and then at medium speed for about 1 minute.
  3. In a separate bowl, combine all of the dry ingredients. Gradually mix the dry ingredients into the pumpkin mixture until a fluffy dough forms. Drop heaping teaspoon-fuls of the dough onto parchment paper lined cookie sheets and bake at 400 degrees for 11-13 minutes (I bake mine for 12 minutes, but every oven will vary). The cookies will puff up and will not look gooey in the center when they are done.
  4. Glaze:
  5. Combine butter, brown sugar, and milk in a small saucepan. Bring to a boil and then boil for 2 minutes, stirring frequently (be sure to not let it boil over). Remove from heat, and let mixture cool off. While the mixture is still slightly warm, add the powdered sugar and wisk vigorously until no lumps remain. Drizzle over pumpkin cookies.
