Pulled Roast Beef Sliders or Sandwiches

Pulled Roast Beef Sandwich

Here’s a family favorite recipe that serves a crowd!  These are great to prepare in the crock pot for a quick dinner between ball practices, and you can easily double the batch to go in the freezer for another dinner in the future!  You can serve them on regular buns as the main dish, or on small “slider” buns if they’re part of a party buffet.  Either way, they’re delicious and pretty easy to make ahead and keep warm in a crock pot.

Pulled Roast Beef Sliders or Sandwiches
Ingredients
  • Beef Chuck Roast, 2-3 lbs
  • French Onion Soup, 1 can
  • Hamburger buns or slider buns
Instructions
  1. Season the chuck roast with salt, pepper, and any other seasonings of your choice.
  2. Place in a large crock pot with about ½ cup water, and cook for 6-8 hours on low.
  3. When the roast is fully cooked, remove the meat to a plate and allow to cool slightly until it's cool enough to work with.
  4. Pour juices into a bowl and allow to cool. The fat will come to the top to make it easier to skim off
  5. Using two forks, shred the roast into bite-sized pieces. Discard all fat and other tissue, leaving only the pulled beef
  6. Remove most of the fat from the reserved cooking juice, and return the remaining juice to the crock pot with the pulled beef
  7. Add about 1 can of French Onion Soup to the beef mixture (if you prefer less onion flavor, you can substitute plain beef broth)
  8. Allow the beef to reheat in the crock pot, and keep the mixture on low until your party.
  9. *Note: A 2-3 lb roast will make about 12-16 regular sandwiches, even more sliders depending on bun size and how full you make them
