Cooking on a Shoestring: Monday Meal Planning

It’s Monday–time to share our dinner-time game plans for the week!  A little effort with meal planning at the beginning of the week helps me to provide my family with nutritious, budget-friendly meals, and also allows me to get my act together when our family’s headed in several different directions.

As much as I’ve loved the past few weeks of holiday fun and extended winter break, I have to admit I’m a creature of habit.  I guess I thrive on routine, because I always end up being more productive when the hubs and big kids are back to school and we’re back to the normal schedule.  When they’re all home, we play hard, but the housework is definitely less of a priority.  So for the first completely “normal” week in almost a month, I’m going to try to get in gear and do a better job sticking with my meal plan this week!

Here’s my plan:

Monday:  Chicken Broccoli Rice casserole (made with pre-cooked chicken that I prepared this way)  making double and freezing one!

Tuesday:  Taco night (I’ll make extra rice on Monday to have with our tacos), fresh fruit & veggies

Wednesday:  Beef Stir Fry over noodles

Thursday: Baked chicken, mashed potatoes, corn

Friday:  BBQ pulled pork (leftovers from the pork loin I made a few weeks ago, reheated with BBQ sauce–so easy!), baked smiley fries, green beans

Saturday: Carry-out with a gift card

Sunday: Ham in the crock pot, au gratin potatoes, green beans
