Kielbasa, Potatoes and Peppers

As a mom who works two full time jobs (yes, the site is a full-time job 🙂 and has a family to take care of  – meal planning is essential.
Here’s one of my easy fast-five meals on the rotation.  I always have potatoes around and smoked sausage or kielbasa in the freezer. I take it straight from the freezer, run it under warm water, slice frozen and throw it in. Easy!  (Great on the grill in a foil packet too!)

Ingredients
  • 1 lb. Kielbasa, Smoked Sausage, or Turkey Sausage
  • 1 -2 lbs. Red Potatoes diced (upon family)
  • Multi-Colored Peppers sliced (1-2)
  • Onions (optional)
  • 1 Tbsp Olive Oil
Instructions
  1. Heat Olive Oil in pan
  2. Add in potatoes and sliced kielbasa
  3. Cover over medium heat for 15-20 minutes
  4. Add in peppers and onions, cover for 5-7 minutes
  5. Salt & Pepper to taste
