When I first met my husband, Jeremy, he was an Airman stationed at Dover Air Force Base in Delaware. I made the trip to visit him in Delaware a few times during the first year of dating (which was also his last year in the military). My very first time there, he was adamant that I try this little Italian place right outside the base called “Franco’s.”  I love anything Italian, so it didn’t take much convincing on his part. When we walked in,  it was in the middle of the lunch rush, and they were very busy. As I looked around, I quickly realized that I was the only person not in a uniform. While I felt a little out of place, the smell of simmering marinara was enough to persuade me to find a seat. I started scanning the menu and found many of my favorite dishes at extremely reasonable prices (no wonder they were so busy!). I looked up at Jeremy and he wasn’t looking at the menu. Our server came over to take our order, I decided on a Calzone, and Jeremy, with a grin on his face said, “I’ll have the large cheesesteak, please.” When our food came, I realized that this calzone was going to be my meal for the next three days. It was huge! Jeremy’s cheesesteak was equally impressive..and he made quick work of it.

It has been almost nine years since Jeremy separated from the military to move back to Ohio, and we are STILL talking about Franco’s cheesesteak! For a while I didn’t even want to try to make a cheesesteak because I knew it would never live up to his expectations. Finally, I decided to try my own version of a cheesesteak that was frugal, simple, and tasty. This is what I came up with, and it is even husband-approved!

Crockpot Italian Beef

Ingredients
  • 2 ½ pound beef pot roast, fat trimmed
  • 1 packet of Good Seasonings Zesty Italian dry salad dressing mix
  • 1 packet of Good Seasonings Mild Italian dry salad dressing mix
  • 2 cups good quality beef broth
  • Salt and Pepper to taste
  • 4 Hoagie rolls
  • Garlic Salt
  • Butter
Instructions
  1. Place the beef roast in a slow cooker and season with salt and pepper. Combine beef broth and Italian season packets in a small bowl, and pour over beef roast. Cook on low for 6-8 hours, when done, shred the beef with two forks.
  2. At dinner time, lightly butter the insides of the rolls, and sprinkle with garlic salt. Broil for 1-2 minutes or just until edges of buns start to turn brown. Take the rolls out, assemble the sandwiches (I use two slices of cheese per sandwich), leaving the rolls open, and return to broiler for another 1-2 minutes or until cheese is melted and before the bread is too toasty..keep a close eye on it!
  3. Note: You could also saute your favorite veggies to go on this sandwich. Mushrooms, onion and green pepper would make a great addition.
