Grilled Garlic, Lemon & Basil Chicken
I love Summer in Ohio for a few reasons (not for the obvious reason of being teacher!). I love grilling and REALLY enjoy cooking fresh from my garden! Right now all of my herbs are in season, as well as my garlic and zucchini. Here’s a tasty simple combination that you can throw on the grill.
I used four chicken steaks. Make sure you have the nonstick foil, it makes a world of difference. I put down a few pats of butter (you can use oil or spray). Place your chicken breasts down. Snip and cleanse your basil and crinkle it with your hand to get maximum flavor. Use two or three cloves (not bulbs) of garlic. I press them, again to get the full flavor and spread on the chicken. Squeeze half a lemon over the chicken (roll the lemon first, to get the most juice).
I throw the zucchini on the grill to with nonstick foil as well. Add a little butter, garlic salt & pepper, and you’re ready! So tasty!
