We had Meghan’s 5th birthday party. She wanted a Disney Frozen Birthday themed party. I have to say this was the most fun to plan and to decorate of all the parties I’ve planned! I made homemade marshmallows (so delicious) to set out on the table and to go with the hot chocolate (I’ll do another post on that). These are the BEST marshmallows for hot chocolate!

- 3 envelopes of Knox unflavored gelatin
- ½ Cup cold water
- 2 Cup white sugar
- ¼ Cup water
- ¼ tsp salt
- 1 Tbsp vanilla extract
- ⅔ Cup light corn syrup
- ½ Cup corn starch
- ½ Cup powdered sugar
- Line a 9x13 cake pan with Saran wrap and LIGHTLY oil it (do not use spray)
- Use large bowl (or mixer bowl) to add the ½ cup cold water
- Sprinkle the 3 packages of gelatin over the cold water. Let it sit for about 10 minutes.
- In a saucepan, combine the sugar, corn syrup and ¼ cup water over medium heat. Stir frequently. Let the mixture come to a rapid boil and let it boil for 1 - 2 minutes
- Pour the boiling mixture into the soaked gelatin.
- Whisk on high speed
- Add in salt and vanilla
- Continue to whisk for 15 minutes or until the mixture has very thick peaks.
- Pour the marshmallow mix onto lightly oiled Saran Wrap
- Use another piece of lightly oiled Saran Wrap and press lightly over the marshmallow, creating a seal.
- Let the marshmallows cool and firmly set
- Coating
- In a bowl, mix the corn starch and powdered sugar
- Using kitchen shears, cut marshmallows into the size you'd like.
- Cover each piece of marshmallow in the corn starch and powdered sugar mixture
- Store in an airtight container or freeze.
