Cucumber, Strawberry and Basil Salad
Cucumbers and basil are plentiful in my garden right now. Although strawberries are finished for the year in our neck of the woods, they are still plentiful and affordable. Here’s a very simple, elegant and super-refreshing salad that adults and children love. It’s also a beautiful complement to any grilled pork or fish dish.
Cucumber, Strawberry and Basil salad is just that simple.
- 1 package of strawberries, washed, and sliced
- 2 tablespoons thinly sliced fresh basil
- 2 medium cucumbers, peeled, cored and sliced
- 2 teaspoons balsamic vinegar
- 1 teaspoon sugar
- 1/2 fresh lemon
- 1/4 teaspoon salt
- 1/4 teaspoon fresh ground black pepper
1. Peel, core and slice cucumbers and chill in refrigerator
2. Combine basil, strawberries, balsamic vinegar and sugar – toss and chill for an hour
3. Squeeze fresh lemon over cucumbers (or 1 teaspoon of lemon juice if you’d rather)
4. Mix in with strawberries and basil mixture
5. Toss with salt & pepper
6. Serve immediately
