This is the first in a new series of posts sharing recipes that take advantage of coupon deals and stockpile items. We use coupons to save money, but that doesn’t mean we want to eat the same old things week after week. We’ll try to present a variety of recipes that use items that you may have on hand, and we’ll highlight the deals that are available this week at Giant Eagle. I’ll start off with a favorite in my family: Chicken Broccoli Rice Casserole. The recipe calls for cooked chicken, so I make this after we have a whole chicken, or I’ll cook a few extra chicken breasts when we bake or grill. This week I’m making mine with leftover turkey that I froze after Thanksgiving! This is a great recipe to double while preparing and freeze half for another time. Thaw it in the fridge during the day, then bake before dinner time–less expensive and more healthy than fast food!
Chicken Broccoli Rice Casserole
2-3 cups leftover cooked chicken, in pieces
3 cups prepared brown or white rice
1 package (12 or 16 oz) broccoli, prepared
1 can Cream of Chicken soup
1/4 cup mayo
1/2 cup sour cream
1 T prepared mustard
6-8 oz. shredded cheese (cheddar, colby, whatever you like!)
salt and pepper to taste
15 crackers (Townhouse or Ritz style)
2 T melted butter or margarine
Mix together soup, mayo, sour cream, mustard, salt and pepper, and half the cheese. Then stir in chicken, rice, and broccoli. Spread into a baking dish, top with remaining cheese. Crush crackers, mix with butter, and sprinkle on top. Bake in a 350 degree oven 30 minutes until hot and bubbly.
Serve with a salad and bread or crescent rolls for a warm winter comfort food dinner–for cheap!
