Cooking on a Shoestring: Monday Meal Planning

It’s Monday–time to share our dinner-time game plans for the week!  A little effort with meal planning at the beginning of the week helps me to provide my family with nutritious, budget-friendly meals, and also allows me to get my act together when our family’s headed in several different directions.

I’m hoping to start some cookie baking this week, so I tried to plan for a few simpler dinners to help ease the load.  I’m also working on using up some of the items I have stashed away in my freezer.  It’s a great way to help cut my grocery budget while I’m Christmas shopping, and make sure food doesn’t go to waste. 

Here’s my plan for this week:

Monday:  Poor Man’s Lasagna, homemade applesauce, and garlic bread

Tuesday:  Chicken Broccoli Rice Casserole (made with my pre-cooked and shredded chicken!)

Wednesday: Chicken and Gnocchi soup (Olive Garden copycat recipe…sooo good!), homemade bread

Thursday: Leftovers

Friday:  Ham in the crock pot, au gratin potatoes, green beans

Saturday: Meat loaf, mashed potatoes, peas

Sunday: Turkey & gravy over biscuits (frozen leftovers from Thanksgiving), fresh fruit & veggies
