Cooking on a Shoestring: Monday Meal Planning

It’s Monday–time to share our dinner-time game plans for the week!  A little effort with meal planning at the beginning of the week helps me to provide my family with nutritious, budget-friendly meals, and also allows me to get my act together when our family’s headed in several different directions.

With Thanksgiving this week, that definitely affects our plans for two of the evenings (well, actually three–we’re doing pizza the night before I host 20+ family members at our house!) 

Here’s my plan for this week:

Monday:  Pancakes and fresh fruit (swim lessons and dad’s working late… simple is good!) 🙂

Tuesday:  Hot roast beef sandwiches, veggies and dip, baked sweet potato fries (taking a batch to school for the PTO dinner for parent-teacher conference night…doubling the recipe and having it for dinner too!)

Wednesday: Oven baked chicken, rice, and broccoli

Thursday: Thanksgiving dinners #3 and #4 of the season–bringing Pumpkin Roll!

Friday:  Meat loaf, baked potatoes, green beans

Saturday: Ordering pizza with a coupon…I’ll be working all day on the next day’s dinner!

Sunday: Hosting Thanksgiving dinner for my husband’s extended family at our house
