Cooking on a Shoestring: Monday Meal Planning

It’s Monday–time to share our dinner-time game plans for the week!   Since we’re into November now, I’m thinking about how thankful I am for my meal plan during a busy week.  And let’s face it…they’re all busy right now. 🙂  A little effort with meal planning at the beginning of the week helps me to provide my family with nutritious, budget-friendly meals, and also allows me to get my act together when our family’s headed in several different directions.

Here’s my plan for this week:

Monday: Crock Pot stuffed pork chops, homemade applesauce, biscuits

Tuesday:  Chicken soft tacos, rice, fresh fruit & veggies (bumped from last week since I used the leftovers from my veggie tray to make stir fry)

Wednesday: Out to dinner to celebrate my father-in-law’s retirement! 🙂

Thursday: Spaghetti and homemade meatballs (making a double batch to freeze)

Friday:  Breakfast for dinner with fruit & yogurt smoothies

Saturday: Birthday party for my guys and their friends (they’re turning 5 and 3!)

Sunday: Thanksgiving dinner at church–taking Pumpkin Roll
