Cooking on a Shoestring: Monday Meal Planning

It’s Monday–time to share our dinner-time game plans for the week!   We’re in the midst of an oh-so-fun (and slightly crazy) week of Halloween and birthday festivities.  In some ways it simplifies meal planning because we’re on the go for a lot of them, so there’s not much left to plan for.  It looks like things will settle down a little by this weekend before we celebrate another birthday the following week, so we’ll sneak in some “good dinners” when we can!

Here’s my plan for this week:

Monday: Leftovers! (Daddy’s working late, and the fridge is way too full…tonight’s a no-brainer!)

Tuesday:  Crock pot roast beef, mashed potatoes and gravy, green beans (this didn’t happen last week, and we need a good dinner this night!)

Wednesday: Dinner at Church

Thursday: Trick or Treat party with friends–we’re bringing a Halloween Veggie Tray!

Friday:  Honey Garlic Chicken, rice, and broccoli

Saturday: possible date night, or something on the grill, baked potatoes, and a veggie

Sunday: Chicken soft tacos, rice (I’ll make extra on Friday, then reheat and add seasonings today), fresh fruit & veggies
