Cooking on a Shoestring: Monday Meal Planning

It’s Monday–time to share our dinner-time game plans for the week!  A little effort with meal planning at the beginning of the week helps me to provide my family with nutritious, budget-friendly meals, and also allows me to get my act together when our family’s headed in several different directions.

It’s our last week of soccer–which means it’s our last week of juggling swim team, soccer, and dinner–woo hoo! 

Here’s my plan for this week:

Monday:  BBQ Boneless Ribs in the Crock Pot (sooo easy and so yummy!), au gratin potatoes, green beans

Tuesday: Packed sandwiches, pretzels, fresh fruit & veggies (between swim team & soccer)

Wednesday: Dinner at Church for Wed. night activities

Thursday: Pizza with a coupon at the park (picnic between swim team and soccer practices)

Friday: Chili with corn bread, veggies and dip, apple slices

Saturday:  Burgers and hot dogs on the grill with friends, baked beans, broccoli

Sunday: Breakfast for dinner–my son is requesting “keesh” again (broccoli, bacon, and cheese quiche 🙂 )
