Cooking on a Shoestring: Monday Meal Planning

It’s Monday–time to share our dinner-time game plans for the week!  A little effort with meal planning at the beginning of the week helps me to provide my family with nutritious, budget-friendly meals, and also allows me to get my act together when our family’s headed in several different directions.

The balancing act of activities and feeding the family continues…although it’s getting a little cooler for our picnics at the park between swimming and soccer!  Doing our best to manage things, but Wednesday nights will get a little easier because dinner is provided for our Wednesday night church activities, which start this week (awesome for me, because I’m teaching, so I can focus on prepping for my class rather than prepping dinner those nights!)

Here’s my plan for this week:

Monday:  Chicken Pot Pie, Homemade applesauce

Tuesday: Ham or turkey sub sandwiches, chips, fruit, yogurt, and veggies.

Wednesday: Dinner at Church

Thursday: Stromboli, apple slices, and carrot sticks (picnic between swim team and soccer practices)

Friday: Roasted Chicken, Mashed Potatoes & Gravy, Corn on the Cob (whole chickens are on sale starting Thursday at GE–if I get ambitious, I might cook two and freeze the extra meat for these recipes here)

Saturday:  My cousin’s wedding reception–congratulations, Sara & Andrew! 🙂

Sunday: Cheeseburgers on the grill, baked french fries, green beans
