Cooking on a Shoestring: Monday Meal Planning

It’s Monday–time to share our dinner-time game plans for the week!  A little effort with meal planning at the beginning of the week helps me to provide my family with nutritious, budget-friendly meals, and also allows me to get my act together when our family’s headed in several different directions.

It’s our last week before school starts (we don’t start till after the county fair here–woo hoo!)…but we’re still trying to finish up all things fun and wonderful before heading back to school.  So it’s half “last week of freedom” and half “I can hardly wait for our school year routine to start because the house is trashed after being gone all day having too much fun!”  🙂  But I’ll take it!

This week we’re keeping it fairly simple so we can just enjoy our last week of summer.  I’m hoping to get a little back-to-school baking done, but we’ll see how it goes…that might wait till next week when the big three head off to school and I just have my littlest helper at home to entertain!

Here’s my plan for this week:

Monday:  Pot roast, mashed potatoes & gravy, green beans (bumped from the last two weeks, but I’m really honestly making it today!)

Tuesday: Chicken on the grill, rice, corn on the cob

Wednesday: Spaghetti and meatballs (from the freezer), apple slices, carrots and dip

Thursday: Chicken and biscuits (from the freezer), broccoli

Friday: My brother’s rehearsal dinner!

Saturday:  My brother’s wedding–Congratulations, Sean & Dena!

Sunday: Church back-to-school bonfire at our house (providing the hot dogs & beverages, and everyone else is bringing the rest)
