Cooking on a Shoestring: Monday Meal Planning

It’s Monday–time to share our dinner-time game plans for the week!  A little effort with meal planning at the beginning of the week helps me to provide my family with nutritious, budget-friendly meals, and also allows me to get my act together when our family’s headed in several different directions.

This week we’re trying something a little different.  Before things get too terribly crazy with school and sports, I asked each of my four kids to choose a meal to prepare with me.  They love helping in the kitchen, and it’s fun to have a little one-on-one time with them.  Usually when we get busy, I just need to plow through dinner prep in order to get something on the table, so I’m looking forward to taking my time with the kids, teaching them something new, and letting them take “ownership” over dinner for the night.

Here’s my plan for this week:

Monday:  the 5-year-old son’s pick: “Meat Love” (that’s what he calls meatloaf…probably because it’s his love language, and his most favorite food in the whole world!), “slimy noodles” (the packets of Knorr Alfredo noodles), and green beans

Tuesday: the 7-year-old son’s pick: Bacon, broccoli, and cheese quiche.  Seriously.  He came along with me to a bridal shower brunch a few weeks ago, tried quiche for the first time, and thinks it’s the best thing he’s ever eaten.  Go figure.

Wednesday: the 9-year-old daughter’s pick: Hot shredded chicken sandwiches, fresh veggies, and french fries.  Since her meal pick is pretty simple, she wanted to make something fancy for dessert, so we’ll either do Lemon Fry Pies or Apple Crisp

Thursday: the 3-year-old son’s pick: Pancakes and fresh fruit

Friday: Grilled chicken, baked potatoes, corn on the cob

Saturday:  Hot dogs and sausages over a bonfire

Sunday: Pot roast, mashed potatoes & gravy, green beans
