Cooking on a Shoestring: Monday Meal Planning

It’s Monday–time to share our dinner-time game plans for the week!  A little effort with meal planning at the beginning of the week helps me to provide my family with nutritious, budget-friendly meals, and also allows me to get my act together when our family’s headed in several different directions.

After a few weeks of stocking the freezer with extra food when I had the chance, I’m cashing a few of them in on some busy evenings this week.  We’ll also be busting out the grill–I love how easy grilled meals can be with a simple side and microwavable veggie: easy prep, minimal cleanup, and the hubby handles the hard part of the meal.  Remind me again why we don’t grill every night? 😉

Here’s my plan for this week:

Monday:  Breakfast for dinner: ham & cheese omelettes, fresh fruit

Tuesday: Steak on the grill, baked potatoes with toppings, green beans

Wednesday: Tacos, fresh fruit & veggies

Thursday: Pulled Roast Beef Sliders (all cooked & frozen–just need to warm them up and serve them!)

Friday: Hot dogs/sasuages over a bonfire, baked beans, carrots & dip, s’mores

Saturday:  Out to dinner for our anniversary!

Sunday: Lasagna, garlic bread, salad, applesauce
