Cooking on a Shoestring: Monday Meal Planning

It’s Monday–time to share our dinner-time game plans for the week!  A little effort with meal planning at the beginning of the week helps me to provide my family with nutritious, budget-friendly meals, and also allows me to get my act together when our family’s headed in several different directions.

We’ve got a few nights at home this week, and a few more on the run, so on the days we’ll be home I’m trying to do a little more freezer cooking for when things get busy again in a few weeks.  I did that with a few meals last week, and the freezer is already starting to look pretty good!

Here’s my plan for this week:

Monday:  Pot roast in the crock pot, mashed potatoes & gravy, broccoli  (making two roasts so the leftovers can go in the freezer for Pulled Roast Beef Sliders –this got bumped from last week!)

Tuesday: Tacos–making double and freezing half of the taco meat for later

Wednesday: Dinner out with family who’s visiting from out of town

Thursday: Chicken Pot Pie (one of my favorites–yummo!  If I get really ambitious, I might double this recipe too!)

Friday:  Homemade pizza, apple slices, carrots & dip

Saturday:  Grilled hamburgers, baked french fries, green beans

Sunday: Grilled chicken, oven roasted redskin potatoes, corn on the cob
