It’s Monday–time to share our dinner-time game plans for the week! A little effort with meal planning at the beginning of the week helps me to provide my family with nutritious, budget-friendly meals, and also allows me to get my act together when our family’s headed in several different directions.
Aahhh…this week I feel like our summer finally begins! June was insane with the kids’ sports, my teaching during the day, and a ton of extra activities on the evenings and weekends. All good and fun, but it’s pretty fantastic to have a more low-key week stretching in front of us. Knowing that low-key will only last a few weeks, I’m trying to take advantage and do a little freezer cooking for vacation and when soccer season fires up in August.
Here’s my plan for this week:
Monday: Spaghetti and meatballs–making a BIG pot to hopefully freeze 2 dinners’ worth in addition to what we eat tonight!
Tuesday: Grilled chicken, baked potatoes, green beans, salad (prepping extra grilled chicken and salad for lunches the rest of the week)
Wednesday: Picnic dinner on the way to a swim meet!
Thursday: Pot roast in the crock pot, mashed potatoes & gravy, broccoli (making two roasts so the leftovers can go in the freezer for Pulled Roast Beef Sliders on vacation!
Friday: Cookout with friends
Saturday: Birthday party for my dad and sister
Sunday: Stromboli–making extra to freeze for vacation!
