Cooking on a Shoestring: Monday Meal Planning

It’s Monday–time to share our dinner-time game plans for the week!   was able to get a bushel and a half of apples this weekend, so I’m hoping to spend some time making homemade applesauce and apple dumplings, and get some apple strudel in the freezer for later.  So I’m going to keep things simple for dinner a few of the nights to give myself a little more time for my apple “extras.”  That being said, we also have a week where we’ll actually have everyone home for dinner most nights, so I’m trying for some crowd pleasers too! 🙂 

Here’s my plan for this week:

Monday: Pot Roast in the crock pot, Mashed Potatoes and gravy, and green beans (and apple dumplings for dessert!)

Tuesday:  Chicken Quesadillas, veggies & dip, fresh fruit

Wednesday: Dinner at Church

Thursday: Breaded baked chicken, rice, peas

Friday: Grilled pork chops, baked potatoes, broccoli

Saturday: Bonfire party–hot dogs, s’mores, hot apple cider, and whatever else everyone brings

Sunday: Leftovers
