Cooking on a Shoestring: Monday Meal Planning

It’s Monday–time to share our dinner-time game plans for the week!  A little effort with meal planning at the beginning of the week helps me to provide my family with nutritious, budget-friendly meals, and also allows me to get my act together when our family’s headed in several different directions.

As I sit down to plan this week, the Hallelujah Chorus is ringing in my head…baseball season is done, which means dinner times have become way simpler (at least until soccer starts in August)!  I’m still teaching this week, so I’m hoping to do some grilling and other simple meals, now that we’ll be able to sit down together as a family to enjoy them!

Here’s my plan for this week:

Monday:  Chicken on the grill, baked potatoes, broccoli  (grilling extra to put on salads for lunches this week–yum!)

Tuesday: Lasagna (assembling it the night before so the hubs can pop it in the oven), salad, fresh fruit, bread

Wednesday: Out to dinner for my daughter’s birthday (with a free coupon for her meal!)

Thursday: Pot roast in the crock pot, mashed potatoes & gravy, green beans

Friday:  Cookout for the 4th of July

Saturday:  Wedding reception for a friend

Sunday: Leftovers 🙂
