It’s Monday–time to share our dinner-time game plans for the week! A little effort with meal planning at the beginning of the week helps me to provide my family with nutritious, budget-friendly meals, and also allows me to get my act together when our family’s headed in several different directions.
During the summer, we always have a few weeks where my husband and I switch our usual roles from the rest of the year–he’s home from his work as a teacher, and I head off to teach for the summer program I’ve done for years. It means long, busy days away from home for me, but I try to help the hubs out by suggesting some simple dinners–usually he can take care of much of the prep work, and one of us will finish things off when I get home. This year we have the added bonus of swim team and baseball in the schedule…so we’re doing the best we can!
Here’s my plan for this week:
Monday: Chicken Stir Fry (leftover veggies cut & ready from a weekend party–hubby will thaw, cut, and marinate the meat)
Tuesday: Packed picnic dinner at my son’s baseball game–sandwiches or wraps, fruit, veggies, chips or pretzels
Wednesday: Another picnic dinner for my daughter’s swim meet…basically the same as Tuesday
Thursday: Dinner out for my father-in-law’s birthday!
Friday: Cheeseburgers on the grill, baked french fries, broccoli
Saturday: Pork roast in the crock pot, mashed potatoes & gravy, green beans (leftovers for next week when I teach again)
Sunday: Graduation party for one of our Youth Group kids
