It’s Monday–time to share our dinner-time game plans for the week! A little effort with meal planning at the beginning of the week helps me to provide my family with nutritious, budget-friendly meals, and also allows me to get my act together when our family’s headed in several different directions.
With a busy week ahead, I thought it would be a good idea to share one of my favorite pre-cooking tips: How to Cook, Shred, and Freeze Chicken Breast! If you’ve never tried it before, it’s great for buying chicken breast when you see it at a great price, and getting it ready to go for simple dinners for busy nights. Once your chicken is cooked and shredded, here are some ideas for using it:
Soup: Add noodles, veggies, and chicken to the cooking broth to make a simple Chicken Noodle soup, or use the chicken in Chicken and Gnocchi soup
Chicken Pot Pie: all the way from scratch or with a store-bought crust…either way is delicious!
Quesadillas: Keep it simple and cook with cheese between tortillas, or kick it up a notch with Chicken and Black Bean Quesadillas
Chicken Salad: Mix with mayo and your favorite add-ins (sliced grapes or green peppers & celery are popular) for the perfect summer sandwich
Chicken Broccoli Rice casserole: cheesy and delicious, and freezes well for an extra dinner for later!
Chicken and Biscuits: Mix with leftover frozen gravy (or crack open a jar–we won’t tell!), and serve over biscuits with a veggie–comfort food!
Chicken tacos or enchiladas: Mix with your favorite Mexican seasonings to have an almost-finished main dish.
