It’s Monday–time to share our dinner-time game plans for the week! A little effort with meal planning at the beginning of the week helps me to provide my family with nutritious, budget-friendly meals, and also allows me to get my act together when our family’s headed in several different directions.
We ended up with some leftovers from family celebrations this weekend–chopped veggies are getting recycled as stir fry, and the ham is going into my son’s favorite–Christmas Breakfast (which requires neither Christmas nor Breakfast to be in my meal plan!). The leftover turkey and gravy is in the freezer in a ziploc baggie for quickie Turkey & Gravy over Biscuits on a busy night! Not wasting food is frugal, and having simple stuff to make with leftovers makes life a whole lot easier–sounds like win-win to me! 🙂
Here’s my plan for this week:
Monday: Chicken Stir Fry over noodles
Tuesday: Christmas Breakfast, fruit & yogurt smoothies
Wednesday: Pot roast, mashed potatoes & gravy, green beans (bumped from last week)
Thursday: Cheesy Chicken Roll-Ups, broccoli, rice
Friday: Hot dogs over a bonfire (weather permitting–the kids have been begging!)
Saturday: Out to dinner with friends
Sunday: Grilled hamburgers, baked sweet potato fries, peas
