It’s Monday–time to share our dinner-time game plans for the week! A little effort with meal planning at the beginning of the week helps me to provide my family with nutritious, budget-friendly meals, and also allows me to get my act together when our family’s headed in several different directions.
We’re getting used to the routine of having swimming, baseball, or church activities most nights of the week…but it means we’re in a season of relatively simple meals (which is fine with my family, because they love the simple stuff, and at least one of the four kids puts up a fight when it’s too complicated of a dinner!) With evening meetings for the hubby this week, that gives me reason to simplify things even more–as long as everyone gets fed, and there are fruits and/or veggies on the menu, it gets the job done.
Here’s my plan for this week:
Monday: Leftovers! Using up what’s in the fridge, plus some fresh fruit & veggies
Tuesday: Boneless pork loin in the crock pot, mashed potatoes & gravy, corn (bumped from last week)
Wednesday: Dinner at church
Thursday: Chicken pot pie
Friday: French toast, sausage links, fresh fruit
Saturday: probably ordering Chinese food…we’ve all been craving it for a while!
Sunday: Tacos, carrots & dip, apple slices
