Cooking on a Shoestring: Monday Meal Planning

It’s Monday–time to share our dinner-time game plans for the week!  A little effort with meal planning at the beginning of the week helps me to provide my family with nutritious, budget-friendly meals, and also allows me to get my act together when our family’s headed in several different directions.

Our first baseball season begins this week, with 2-3 evening practices a week for my son for the forseeable future (this would be the point when I ask myself why we were so enthusiastic about getting him signed up…)  It would be so easy to just hit the drive thru on activity nights, but that would mean four evenings a week when you factor in his sister’s swim lesson.  That’s just no good–both nutritionally and financially–so planning becomes super important. 

Here’s my plan for this week:

Monday:  Crock pot roast beef, mashed potatoes & gravy, green beans

Tuesday:  Breakfast for dinner

Wednesday:  Dinner at church

Thursday:  Poor man’s Lasagna (making a double batch to freeze one!)

Friday:  Stromboli, fresh fruit, carrots & celery, salad

Saturday:  Ordering Chinese food–yum!

Sunday: Crock Pot stuffed pork chops, broccoli
