Cooking on a Shoestring: Monday Meal Planning

It’s Monday–time to share our dinner-time game plans for the week!  We’re settling into our busy school-year schedule with all our activities, and working things out with how to get everyone fed and off to their destinations.  A little planning goes a long way–so far, so good! 

This week I’m using some stuffed shells that I prepared a while ago and had in the freezer, and I’ll also split a batch of bacon between Tuesday’s egg casserole (my son’s favorite meal in the whole world!) and Friday’s soup–perfect for fall weather!!

So…here’s the plan:

Monday: Stuffed Shells, Garlic Bread, Salad, Carrot Sticks

Tuesday: Christmas Breakfast (egg bake casserole), Fresh Fruit

Wednesday: Dinner at Church

Thursday: Crock Pot Stuffed Pork Chops, Green Beans, Applesauce

Friday: Baked Potato Soup

Saturday: Out to dinner with our Camping Club friends

Sunday: Taco night
