Cooking on a Shoestring: Monday Meal Planning

It’s Monday–time to share our dinner-time game plans for the week!  A little effort with meal planning at the beginning of the week helps me to provide my family with nutritious, budget-friendly meals, and also allows me to get my act together when our family’s headed in several different directions.

We have a busy night on Monday, with a doctor appointment for one kid and swim lessons for another.  I’m hoping we’ll have time for dinner at home, but if not we’ll need to grab something on the road…sometimes it can’t be helped, but I’m thankful that most of the time, my meal planning helps this be the “exception” rather than the rule!  It helps that our Wednesday evening church activities start up this week, which means we get to eat at church rather than preparing something before we head out.  I’m looking forward to next week, when we get to fill the freezer with the 1/4 cow we’re buying from a friend–that gives me a lot to choose from in the future when I go to plan meals!

Here’s my plan for this week:

Monday:  Quick breakfast for dinner if time allows, otherwise grabbing dinner out

Tuesday:  Chicken Pot Pie (making one for us, and taking one to a friend!) 🙂

Wednesday:  Dinner at church

Thursday:  Crock Pot beef stew with potatoes, green beans, & carrots

Friday:  Chicken quesadillas, fresh fruit, carrot sticks

Saturday:  Cheeseburgers, baked sweet potato fries, peas

Sunday: Boneless pork chops, rice or noodles, green beans (bumped from last week)
