Cooking on a Shoestring: Monday Meal Planning

It’s Monday–time to share our dinner-time game plans for the week!  A little effort with meal planning at the beginning of the week helps me to provide my family with nutritious, budget-friendly meals, and also allows me to get my act together when our family’s headed in several different directions.

Well, after a low-key week last week, our evenings are starting to fill back up with activities.  All the more important to have a plan of attack so I don’t give in to the temptation of hitting the drive-thru!  I’d also like to try my hand at making my own yogurt this week…we’ll see how the week goes, but if it works out, I’ll share the recipe!

Here’s my plan for the week:

Monday:  Ham, baked potatoes, peas

Tuesday:  Spaghetti, salad or carrot sticks, applesauce

Wednesday:  Simple supper at church before Ash Wednesday service (making Ham & Bean soup)

Thursday:  Boneless pork chops, rice or noodles, green beans

Friday:  Breakfast for dinner (probably pancakes or french toast with fresh fruit or smoothies)

Saturday:  Homemade pizza or Stromboli

Sunday: Breaded baked chicken (recipe coming!), mashed potatoes, corn
