Cooking on a Shoestring: Monday Meal Planning

It’s Monday–time to share our dinner-time game plans for the week!  A little effort with meal planning at the beginning of the week helps me to provide my family with nutritious, budget-friendly meals, and also allows me to get my act together when our family’s headed in several different directions.

We had a bunch of plans change throughout the past week for various reasons, which means I’m recycling about half my meal plan from last week.  Sometimes, that’s how it goes, isn’t it?  But if I know I have the ingredients for the meals that didn’t happen last week, at least I know I’m ready for this week (which is especially nice when I don’t feel like going out in nasty sub-zero temps over the next few days anyway!).  We had friends over to go sled riding over the weekend, and I made one of my favorite recipes, this Olive Garden replica Chicken and Gnocchi soup.   It really is fantastic, and I can’t wait to warm up my last bowl of leftovers in a few minutes for a cozy lunch! 

Anyway, here’s my plan for this week:

Monday:  Stuffed pork chops in the crock pot, green beans, homemade applesauce (bumped from last week)

Tuesday:  Turkey & gravy over biscuits (frozen leftovers from Thanksgiving), fresh fruit & veggies

Wednesday:  Beef stroganoff over noodles, peas

Thursday: Chicken Pot Pie

Friday:  Stromboli, veggies & dip, and fresh fruit (having friends from church over)

Saturday: Dinner at my in-laws’ (rescheduled from last week)

Sunday: Breakfast for dinner
