Cooking on a Shoestring: Monday Meal Planning

It’s Monday so it’s time to share our dinner plans for the week.  Meal planning is an important tool for stretching your budget.  Plan around food you have on hand, along with what’s on sale for the week.

We have another busy week ahead, so I’ll be fitting in my more labor-intensive meals when I have more time to make them, and we’ll be taking advantage of some quickie meals when we’re crunched for time.  Here’s our plan for the coming week:

Monday: Chicken Pot Pie (leftover already-cooked chicken, a bag of frozen veggies, and prepared pie crust…all I’ll need to do is prepare the sauce, put it together, and bake it.  Easy clean-up too!)

Tuesday: Drive thru dinner.  Calling hours for my great aunt, so we’ll be on the road at dinnertime.  We try to save the fast food dinners for when it’s unavoidable, and this qualifies!

Wednesday:  Crock pot stuffed pork chops, peas, canned fruit

Thursday:  Chili and cornbread, veggies & dip, apple & orange slices

Friday: Stromboli, green beans, homemade applesauce

Saturday:  Kids’ choice—a friend of mine suggested this, letting the kids choose and help prepare dinner.  Thought it might be kind of fun to try on Saturday night since (so far) no plans are on the calendar.  

Sunday:  Adult Sunday School dinner at church—no cooking for me, woo hoo! 🙂
