Cooking on a Shoestring: Monday Meal Planning

It’s Monday–time to share our dinner-time game plans for the week!  Last week of summer vacation for my kiddos, but with sports starting up and the husband back to work, we’re starting to get into the school year routine.  Taking advantage of the good deal on boneless skinless chicken breasts at Giant Eagle this week and planning a few chicken favorites, and looking forward to a fun weekend with friends, and without a ton of cooking (always a bonus!)

Monday: Pork roast in the crock pot, mashed potatoes & gravy, green beans (bumped from last week…again…it’s actually IN the crock pot right now, so I KNOW we’ll eat it tonight!)

Tuesday:  Chicken Stir Fry–one of the kids’ favorites, and we have veggies to use up!

Wednesday: Burgers on the grill, baked fries, green beans, watermelon

Thursday:  Honey Garlic Chicken over rice, broccoli

Friday:  Date night–using a gift card we were given (no cooking and free–woo hoo!)

Saturday: Back to school pizza party with our cousins–Pizza, veggies, fruit, and Back-to-School cupcakes!

Sunday: Birthday party for my sweet nephew–Happy birthday, Landon!
