Cooking on a Shoestring: Monday Meal Planning

It’s Monday–time to share our dinner-time game plans for the week!  Is it Back-to-School time for your family?  My husband’s a teacher, and he heads back this week, but the kiddos still have a little more time at home.  We’re starting to get back into the school year routine…and somehow, even though in many ways we’re busier, there’s just something about the routine that helps me stick to my meal plan. 

I’ll admit I was pretty hit-or-miss with last week’s plan…I did great by doubling my lasagna recipe and getting a second one in the freezer for later, and I also pre-browned the ground beef that I planned on.  But I also had to do some shuffling when plans changed, and called on a few of my “Fast Five” backups.  That being said, there are a few repeats for this week because they didn’t get made last week.  Since I know I have all the ingredients on hand, we’re ready to roll for this week 🙂 

Monday: Pork roast in the crock pot, mashed potatoes & gravy, green beans (bumped from last week…crock pot meals are great when you remember to start them long before dinnertime!)

Tuesday:  Fish sticks, mac & cheese, broccoli, apple slices (special request from the 4-year-old…not gourmet, but it’ll get the job done on soccer night!)

Wednesday: Dinner out for grownups–kids will eat with their grandparents

Thursday:  Tacos, fresh fruit, carrots & dip (bumped from last week)

Friday:  Grilled chicken, baked potatoes, peas

Saturday: Homemade pizza, fresh fruit, fresh veggies

Sunday: Breakfast for dinner: omelettes and home fries with smoothies
