Cooking on a Shoestring: Monday Meal Planning

It’s Monday–time to share our dinner-time game plans for the week!  Finally, we have a more normal week dinner-wise.  Yay!  We’re hoping to have a picnic on the boat one night this week, then round things out with a couple favorites we haven’t had for a while.  After getting a few batches of spaghetti and meatballs in the freezer last night, I planned a few recipes I can double up on, or do a “makeover” on for round two (like the pork roast that will turn into BBQ pork sandwiches for another time). 

Monday: Sandwiches–picnic lunch on the boat! (weather permitting)

Tuesday:  Pork roast in the crock pot, mashed potatoes & gravy, green beans

Wednesday: Chicken & biscuits, broccoli

Thursday:  Lasagna, salad, applesauce (planning to brown double the ground beef to help prep for tomorrow)

Friday:  Tacos, fresh fruit, carrots & dip (bumped from last week)

Saturday: Cookout with friends–burgers & hot dogs, and whatever everyone brings

Sunday: Leftovers
