Cooking on a Shoestring: Monday Meal Planning

It’s Monday–time to share our dinner-time game plans for the week!  I’m not going to lie–this week’s schedule has thrown me for a loop with meal planning.  Usually when we’re busy and running around, meal planning helps me keep my sanity and avoid tons of carry out or drive-thru options.  But…the older two kids are at camp until 6:00 each evening this week, and they’ll eat dinner at camp, and we’ll be in the car from about 5:15-6:40 with the whole pickup duty, so I think we’ll be eating in shifts (or while we travel).  Add to that the fact that soccer practices start up for the boys…yep, this week’ll be a doozy (and probably a preview of things to come as we adjust to four kids’ worth of activities!).

Anyway…here’s my tentative plan for the week.  Aiming for a few things that can be eaten whenever people are ready for them, and hopefully a few “portable” options so whoever heads up to get the kids could have the possibility of taking theirs to go!

Monday: Chicken stir fry over rice

Tuesday:  Tacos, fresh fruit, carrots & dip

Wednesday:  Beef & Noodles (using leftover pot roast & gravy), green beans

Thursday:  Burgers on the grill, baked waffle fries, broccoli

Friday:  Breakfast for dinner–probably omelettes

Saturday: Bonfire with friends–hot dogs, camper pies, s’mores, and fresh fruits & veggies

Sunday: Spaghetti and meatballs  (bumped from last week)
