It’s Monday–time to share our dinner-time game plans for the week! We have a few busy days ahead, so I’m going to try a few of my favorite tricks–cooking extra meat to repurpose in another meal, and a few of my “Fast Five” favorites, including breakfast for dinner and chicken quesadillas. We’ll also be doing a lot of fresh fruits and veggies–my kids like ’em better crunchy, and it’s one less thing to heat up the kitchen! We won’t be getting terribly gourmet this week, but I rounded up a plan that’ll get some reasonably well-balanced meals in their bellies, and I’ll be able to avoid the temptation of eating out.
Here’s our meal plan for this week:
Monday: Grilled chicken, rice, and peas (grilling extra chicken to go with tomorrow’s dinner)
Tuesday: Angel hair pasta with alfredo sauce topped with grilled chicken, salad, carrots & dip
Wednesday: Cookout! Burgers or hot dogs on the grill, baked beans, fresh fruit & veggies
Thursday: Breakfast for dinner–probably omelettes or French toast
Friday: Spaghetti and meatballs, garlic bread, salad, applesauce
Saturday: Pulled pot roast sandwiches, green beans, fruit salad
Sunday: Chicken quesadillas, chips & salsa, fresh veggies, leftover fruit salad
