Cooking on a Shoestring: Monday Meal Planning

It’s Monday–time to share our dinner-time game plans for the week!  This week is a bit insane for us, because not only is it one of the few weeks of the year when I head “back to work” full-time to teach for a kids’ summer program, it’s also our church’s Vacation Bible School in the evenings…so elaborate home-cooked meals aren’t tops on my agenda for the week.  I’ll be taking advantage of some of the pre-prepped meals I doubled up on in the past few weeks and threw in the freezer.  That and a strategically-used Groupon should help us survive the week, and enjoy some of the special things we have planned without stressing too much over food. 

Here’s our meal plan for this week:

Monday: Spaghetti and meatballs, applesauce, salad (meatballs & sauce from the freezer)

Tuesday: Dinner on the road–we need to attend calling hours

Wednesday: Chicken Pot Pie from the freezer

Thursday:  Cici’s Groupon between my daughter’s performance and VBS

Friday: Pot Roast in the Crock Pot, Mashed Potatoes and Gravy, green beans

Saturday: Honey Garlic Chicken, rice, broccoli

Sunday: Grilled chicken or steak, baked potatoes, salad, veggie
