Cooking on a Shoestring: Monday Meal Planning

It’s Monday–time to share our dinner-time game plans for the week!  Last week I really wanted to work on batch cooking, and it worked well.  I pre-cooked my taco meat when I made lasagna, and ended the week with both lasagna and a chicken pot pie in the freezer for when I’m teaching at a summer program. 

This week we have a little end-of-school-year craziness to look forward to, so I’m relying on some family-pleasing stand-bys to keep us afloat.  This would be an easy week to turn to carry-out a bunch, but with a little forethought I have a doable game plan to get meals on the table without a ton of fuss. 

Here’s our meal plan for this week:

Monday: Ordering pizza–it’s been a while, Papa John’s has a 50% off deal, and I’ve been fighting a cold for a week.  Perfect timing! 😉

Tuesday: Chicken Stir Fry over pasta

Wednesday: Mini-meatloaves, rice, broccoli (bumped from last week when I decided to make Chicken Pot Pie!)

Thursday:  Crock pot BBQ beef ribs, baked potatoes, green beans

Friday: Long-overdue date night–woo hoo! 

Saturday:  Ravioli, salad, applesauce, carrots & dip

Sunday: Breakfast for dinner
