Cooking on a Shoestring: Monday Meal Planning

Cooking on a Shoestring: Monday Meal Planning

It’s Monday–time to share our dinner-time game plans for the week!  One of my big goals for the week is to a little batch cooking–making double of a recipe to put some in the freezer.  I’d like to take some taco meat, sloppy joes, and lasagna on vacation with us, so I’ll try to take the opportunity to get some in the freezer when I can.

Here’s our meal plan for this week:

Monday: Poor Man’s Lasagna (double recipe), garlic bread, carrot sticks, and applesauce (double recipe)

Tuesday: Grilled chicken, noodles, green beans

Wednesday: Mini-meatloaves, rice, broccoli

Thursday:  BBQ pulled pork sandwiches (using leftover pork loin I froze a few weeks ago), baked sweet potato fries, peas

Friday: Taco night (double batch of taco meat to freeze)

Saturday:  Stromboli, fresh fruit, veggies & dip

Sunday: Cookout for Memorial Day

How about you–what’s on your menu this week?  Do you have recipes you like to double and freeze for busy nights?  Join the conversation in the comments or on Facebook!
