Cooking on a Shoestring: Monday Meal Planning

It’s Monday–time to share our dinner-time game plans for the week!  As I looked through my fridge and freezer to plan for this week, I realized we have something we haven’t had much of lately: leftovers!  The kids have been going through some growth spurts, and the amount that I usually make just hasn’t been leaving us anything for the next day (a bummer to the husband who usually takes it in his lunch!).  Anyway, with the husband having a dinner meeting tonight, I’m actually thrilled to have some leftovers to use as an easy dinner for the kiddos and I tonight.  What can I say–I’m easy to please! 🙂

Here’s our meal plan for this week:

Monday: Leftovers

Tuesday: Crock pot stuffed pork chops, peas, fresh fruit (bumped from last week)

Wednesday: Dinner with my mom & dad for a belated Mother’s Day

Thursday:  Breakfast for dinner: omelettes, english muffins, and fruit & yogurt smoothies

Friday: Burgers on the grill, baked sweet potato fries, green beans

Saturday:  Pot luck dinner with friends

Sunday: Chicken (on the grill if it’s nice, baked if not), rice, and broccoli
