Cooking on a Shoestring: Monday Meal Planning

It’s Monday–time to share our dinner-time game plans for the week!  With the nicer spring weather, we’ve been spending more time outside playing and working on the yard.  On nights like that, it’s so easy for dinner to become an afterthought!  I was really thankful for my meal plan last week, keeping me on track and helping me remember to do a little prep work when needed.

Since it looks like we’re in for another fairly nice week (and since we still have a fair amount of work to do on our land), I’ll be taking advantage of my crock pot and some simple meals this week.  Plenty of time for a complicated meal when it’s not gorgeous outside! 🙂 

Here’s our plan for this week:

Monday: Chicken quesadillas (we’ll celebrate Cinco de Mayo a day late since we had a church meal last night!)

Tuesday: Crock pot stuffed pork chops, peas, fresh fruit

Wednesday: Crock pot roast beef, mashed potatoes, green beans

Thursday:  Chicken broccoli rice casserole

Friday: Spaghetti and meatballs (double batch to freeze), garlic bread, salad or applesauce

Saturday:  Family party/birthday party–bringing something yummy, but not sure what.

Sunday: Mother’s Day–whatever it is, I’m not cooking it! 🙂
