It’s Monday–time to share our dinner plans for the week. Meal planning is an important tool for stretching your budget. Plan around food you have on hand, along with what’s on sale for the week.
You might notice that two things on this week’s plan are repeats from last week…we swapped a chicken dinner for our youth group kids’ soccer game last Thursday, and the fish fry at the campground where we stayed over the weekend was just too tempting, so the steaks stayed in the freezer 😉 That’s the thing about a meal plan: it’s there for you to follow, but it’s always good to have one or two quick “go-to” options on stand-by when plans change at the last minute.
Here’s what we’re eating this week. How ’bout you?
Monday: Breakfast for dinner: homemade Belgian waffles, fruit, sausage links
Tuesday: Roasted chicken, mashed potatoes, veggie
Wednesday: Eat at church for Family Night
Thursday: Chicken broccoli rice casserole from the freezer (woo hoo–zero prep, easy cleanup!)
Friday: Stromboli, veggies & dip, fresh fruit
Saturday: Grilled steak, baked potatoes & veggie (chicken nuggets for the kids)
Sunday: Meatloaf cupcakes (my usual meatloaf recipe, but in single-serving portions)
