Cooking on a Shoestring: Monday Meal Planning

Finally more of a “back to normal” week on the schedule (at least so far…)!  Hopefully it’ll all work out that way in the end.  🙂

Here’s our plan for dinners this week.  I love how meal planning lets me use what I have on hand and take advantage of sale items!

Monday: Lasagna, salad, apple slices, garlic bread

Tuesday: Leftovers from Monday (yay for easy!)

Wednesday: Soup Swap & game night at church (taking Homemade Chicken Noodle soup)

Thursday: Chicken Stir fry

Friday:  Breakfast for dinner–scrambled eggs & sausage links, fruit & yogurt smoothies

Saturday:  Tacos, veggies & dip, fresh fruit

Sunday:  Chicken, stuffing, & veggie casserole (already in the freezer–made double the last time I made it!)
