Cooking on a Shoestring: Monday Meal Planning

Well, it’s another less-than-normal week dinner-wise for our family, which seems to becoming our “new normal.”  We’ll be celebrating a birthday, we have plans with church this weekend, and I have some kids who are desperately requesting some seemingly random meals…but as random as they are, I know everyone will eat them, so they’re going on the schedule.

So, here’s my plan for this week…it’s not the most stellar example of domestic goddess-ness, but it’s what we’ll be eating this week.  Hopefully what I’m lacking in the realm of culinary masterpieces, I’ll make up for it a little with the transparency of being “real” about how this week will look! 🙂

Monday: Roast chicken, seasoned potatoes, broccoli

Tuesday: Chicken Quesadillas made with leftovers from last night, salads, veggies & dip, fresh fruit (special request from the kids…they’d eat this every day if I let them!)

Wednesday: Pizza with the grandparents to celebrate my little guy’s 6th birthday!

Thursday: Crock pot chili with corn bread

Friday: Dinner at Grandma’s house 🙂

Saturday: Depends on how late our church activity runs–either dinner out on the way home, or something quick & easy when we get home (grilled cheese & soup, breakfast for dinner, etc.)

Sunday: Stromboli for the Super Bowl (requested by the b-day boy), along with fresh fruits & veggies
