Cooking on a Shoestring: Monday Meal Planning

After a busy few weeks of holiday entertaining and parties, it’s kind of nice to get back into our “normal” routine (as normal as we get around here, I guess!).  Part of that routine is our weekly meal planning!  Throughout the holidays, it pretty much went: cook a gigantic meal, live off leftovers, go to a party, host a party, repeat…  now we’re back to work and school, so we’re back to our regular meal schedule. 

So here’s the plan for the week…throwing in a few favorites that we haven’t had for a while since we’ve been out of the normal dinner routine. 

Monday: Meatloaf cupcakes, noodles, veggie

Tuesday:  Turkey, veggie & stuffing casserole, brown & serve rolls, homemade applesauce (the last of the frozen Thanksgiving turkey from the freezer!)

Wednesday:  Pot roast, mashed potatoes, corn (freeze leftover beef and gravy to make quick and easy beef & noodles sometime soon!)

Thursday: Sweet honey-garlic chicken and rice, broccoli

Friday: Date night! 🙂  Using Christmas gift cards to treat ourselves to something yummy…kiddos are eating at Nana & Papa’s!

Saturday: Sloppy joes, baked fries, veggies & dip, apple & orange slices

Sunday: Spaghetti & meatballs, homemade garlic bread, salad  (planning to make a double batch of meatballs to freeze some!)
