Cooking on a Shoestring: Monday Meal Planning

It’s Monday, so it’s time to share our dinner plans for the week.  Meal planning is an important tool for stretching your budget.  Plan around food you have on hand, along with what’s on sale for the week.

We have another busy week ahead, so I’ll be fitting in my more labor-intensive meals when I have more time to make them, and we’ll be taking advantage of some quickie meals when we’re crunched for time.  Here’s our plan for the coming week:

Monday: Leftovers for the hubs & kids…Mommy’s headed out to dinner with the other Sisters!

Tuesday: Baked chicken, rice, veggie

Wednesday:  Pot roast, mashed potatoes, corn

Thursday:  Crock pot stuffed pork chops, peas, canned fruit (we ended up not having this last week, so I bumped it to this week)

Friday: Stuffed shells (the last of my pre-made stash in the freezer), garlic bread, salad, fresh fruit

Saturday:  Youth group kids here–pizza & Wii night

Sunday:  Leftovers
